The hills of Nablus are stepped with stone terraces and rain fed groves, cared for by the same families, generation after generation.

The trees grow slowly on thin, stony soil between Mount Ebal and Mount Gerizim. That is where the flavour comes from.

From tree to table.

Every October and November, whole families head to the groves for the harvest. Here is how the oil gets from the branch to your kitchen.

  1. 1

    Picked by hand

Families climb the terraces and work through the trees, branch by branch.

  2. 2

    Caught in nets

Nets spread under every tree catch the olives as they fall.

  3. 3

    Crushed and pressed

Soon after picking, the olives go to the press, where they are crushed and pressed into oil.

  4. 4

    Fresh, green oil

Bright, fresh and full of flavour. This is the oil we bring to your table.

Two Palestinian staples.

The oil every Palestinian kitchen runs on, and the cheese Nablus is famous for.

Palestinian olive oil

Cook with it, finish with it, or do it the Palestinian way: warm bread, a pool of oil, then za'atar. Breakfast, the way it has been made for generations.

Fried
Thick slices, crisp and golden on both sides.

Salty from the brine. Soak slices in fresh water before cooking.
